Introduction

Ingredients

    one large and one medium/small eggplant
    1/3 Cup Lemon juice
    1/4 Cup Tahini
    2 Tbsp Sesame Seeds
    2 cloves Garlic, minced
    salt/pepper to taste
    1 Tbsp Olive Oil

Tips

I add more garlic, but 2 large cloves can be plenty if you are sensitive.
This recipe gets better 2nd or 3rd day.


Directions

Poke the eggplant all over with a folk
Place on cookie sheet and bake in 375 degree oven for 40 minutes or until soft
Peel eggplant once able to hold
cube or chop into chunks
place eggplant, lemon juice, tahini, sesame seeds and salt/pepper (to taste) in food processor; blend until combined
Put in serving bowl, and stir in olive oil.
Refrigerate until chilled, overnight is better to let flavors meld.
Serve with vegetable crudite or pita chips
