Ingredients

    1.5 cups uncooked quinoa, rinsed
    2 cans no salt added corn
    2 cans no salt added black beans
    1 large onion, chopped
    1 cup diced tomatoes
    1.5 tbsp olive oil
    6 tbsp lime juice
    1 tbsp ground cumin
    1 tsp garlic powder
    1 tsp oregano
    1 tsp black pepper
    1 tsp cayenne pepper

Tips

This salad is good both warm and cold. Chopped cilantro can also be added, and if you're not watching sodium, salt can be added to the dressing.


Directions

Rinse quinoa (or buy pre-rinsed quinoa) and cook in 3 cups of water.

Mix cooked quinoa in large bowl with corn, beans, onion and tomato.

Mix olive oil, lime juice, and one tablespoon of water with spices and stir into quinoa mixture.
