Introduction

Easy no layer lasagna, with all the usual lasagna flavors but in more healthy amounts for a lighter dish.

Ingredients

    1 lb ground beef (lean) browned and drained
    8 oz wavy lasagna noodles broken into pieces
    1 cup chicken stock
    1-28 oz can of crushed san marzano tomatoes
    2 oz tomato paste
    2 cloves of garlic minced
    1 small onion diced
    1 tbsp EVOO
    2 tsp dried oregano
    2 tsp dried basil
    1/4 - 1/2 tsp red chile flakes
    1 fresno chile finely chopped
    salt and pepper to taste
    1 cup mozzarella cheese
    Parmessan Cheese for garnish

Tips

If you have cottage cheese or ricotta cheese on hand it tastes great mixed in with the pasta and sauce and gives a more authentic flavor. Also, this recipe is so easy to play around with, you should try your own hand at tweaking and substituting to suit your family's unique tastes.


Directions

Bring a pot of water to boil, salt it, and add broken lasagna pieces. Meanwhile, in a skillet add olive oil, brown ground beef and add onions, garlic, fresno chile, salt and pepper. When the onions are tender add the tomatoes, stock, and spices, then simmer for 10 minutes. Drain pasta when it is just a little undercooked and mix it with the sauce. Pour into a casserole dish and top with mozzarella cheese and place in the oven under the broiler until bubbly and slightly brown (about 10 minutes.)
