Number of Servings: 4

Ingredients

    12 oz. Poached Chicken Breast, Chopped or Shredded (can use canned chicken also)
    1/2 Cup Chopped Celery
    1/2 Cup Dried Cranberries
    2 TBS Light Mayo
    2 TBS Light Sour Cream
    2 TBS Poppy Seeds

    4 Slices Honeydew or Cantaloupe Melon

    4 Small Croissants
    (Option 2 Large Croissants halved)





Tips

Chicken Salad and melons can be prepared the day before and stored in refrigerator.


Directions

Mix together all ingredients until blended well

Slice croissants in half horizontally.

Spead Chicken Salad onto croissant bottom, top with upper half.

Serve on plate garnished with parsley or mint leaf.

Serve with slice of fresh melon (honeydew or cantaloupe)

Serving Size: 1 small croissant or 1/2 large croissant
