Ingredients

    5 pounds red onions, sliced
    1 stick of butter
    4 pounds red potatoes, cubed
    5 cloves of garlic, minced
    1 tbsp Worcestershire sauce
    1 tbsp sugar
    3 cans low sodium beef broth
    1/2 to 1 tsp black pepper, to taste
    salt, to taste

Tips

Freeze onions before slicing to avoid tears. And, if possible, use a mincing machine for onions and garlic: saves alot of time! Add any toppers you like, I preferred pretzels or croutons. A nice baggette and cheese would pair very well with this dish. And watch out for the pepper and garlic. They can easily overpower the dish. Feel free to reduce the amount of onions if desired for flavor.


Directions

Melt butter in skillet and add garlic. When simmered down, add onions and garlic butter to crockpot on high for 30 minutes. Meanwhile, parboil potatoes till pierce-able but not tender. Then, add all ingredients together and stick in crock pot on high for 4 hours.
