Like potato salad with a more radish-y taste and less than half the carbs! Like potato salad with a more radish-y taste and less than half the carbs!
Number of Servings: 8


    4 cups cubed rutabaga
    1/4 cup mayo
    1/4 cup sour cream
    1 tablespoon apple cider vinegar
    1 large stalk celery, diced
    1/4 cup chopped onion
    2 hard boiled eggs, chopped
    1 teaspoon salt
    dash pepper


Cook rutabaga in boiling water until tender. Meanwhile, in a salad bowl mix together the remaining ingredients. When the rutabaga is done, drain it and while it is hot mix it with the dressing ingredients in the bowl. Let chill in the fridge before serving.

Serving Size: makes about 8 rounded half cup servings
