Ingredients

    1 c. all-purpose flour
    2/3 cup whole wheat flour
    1 tsp. baking powder
    1 tsp. baking soda
    1/4 tsp. salt
    1 1/3 cups mashed bananas
    1 1/3 cups skim milk or soy milk
    2 tbsp. unsweetened pineapple juice
    2 lg. eggs
    3/4 c. Splenda or artificial sweetener
    6 tbsp. butter, melted
    2 tsp. vanilla extract
    1/2 tsp banana extract

Tips

For the cream cheese topping, beat 2-8oz packages of cream cheese with 1/2 c. of splenda until smooth. Once it is cooled off slather it on top and your done. Enjoy!


Directions

Heat the oven to 350. spray a 13x9x2 pan with cooking spray. Combine flour, baking powder, salt and baking soda and set aside. Combine the mashed bananas, pineapple juice and milk set aside. Beat eggs and splenda. Add butter, vanilla,and banana extract and mix. Add banana mixture and then the flour mixture. Bake for 25 minutes or until done in the middle.
