Ingredients

    3 tsp. Powdered Egg White (or 3 egg whites)
    6 Tbs. Cool Water (omit if using egg whites)
    1 tsp. SweetLeaf Stevia
    1 tsp. Vanilla
    1/2 tsp. Pumpkin Pie Spice
    1 Tbs. Pumpkin (canned or fresh may be used)
    1/4 cup Unsweetened Milk (I used unsweetened flax)
    1.5 Tbs. Coconut Flour (like Bob's Red Mill)
    1.5 Tbs. Flour (I used Bob's Red Mill Low fat Soy Flour)
    1 tsp. Baking Powder

    Top with your choice of toppings and enjoy!

Tips

These can be made in to pancakes, as well. They are tender, so use care when removing them from the waffle iron or turning them, if making pancakes.


Directions

Heat waffle iron according to manufacturer's instruction.
Combine all of the ingredients.
Make your waffles!
