Ingredients

    1 1/2 cups flour
    1 t baking powder, 1/2 t soda, 1/2 t salt
    1/2 t cinnamon, 1/4 t nutmeg, 1/4 t cloves
    3/4 cup butter
    1 cup brown sugar
    1 egg
    1.5 cups peeled, diced apple
    1 cup oatmeal
    1/2 cup raisins
    1/2 cup pecan pieces

Tips

My dough on the cookie sheet was the size of a small golf ball, to make 35. And I'm estimating 6 medium apples to make the 1.5 cup of peeled, diced apples. I don't find accurate calorie info for do it yourself diced apples, so the fiber count may be off for this recipe.


Directions

Cream butter and sugar together. Add spices and powders. Add egg, then flour, then apples, oatmeal, raisins, nuts. Drop by rounded teaspoon onto sprayed cookie sheets. Bake at 400 degrees for about 8 to 10 minutes.

Serving Size: Makes 36 cookies.
