Ingredients

    1 C. chopped Proscuitto (3 .oz)
15 oz can Tomato Sauce w/ Herbs
    10 oz. bag frozen Spinach
1 C. 1% Lowfat Cottage Cheese, thawed, squeezed to drain
    1/4 C. grated Parmesan Cheese
    3 C. Part-Skim shredded Mozzarella Cheese (divided)
    Basil (optional)

Tips

I like to bake last 5-10 minutes uncovered to brown the cheese.
Fresh basil is REALLY GOOD also!

Directions

Cook pasta according to package, drain.
Combine cottage cheese, 1 cup Mozzarella, spinach, Proscuitto and Parmesan. Spray a 9X13 baking dish with non-stick cooking spray. Spread a thin layer of sauce in baking dish. Stuff shells with about 1 heaping tablespoon of mix and place on sauce. Pour remaining sauce over stuffed shells. Top with remaining Mozzarella. (Basil also). Cover with foil and bake @ 375 for 30-40 minutes.
