Ingredients

    One half of a Cauliflower broken into flowerettes
    One onion diced
    One carrot diced
    Three cloves garlic minced
    One cup of red and yellow peppers diced
    One large tomato diced
    One cup each of cilantro, basil and parsley minced
    1/4 cup olive oil
    1 tsp each: salt, pepper and sugar



Tips

I add enough pasta for four people into the sauce and then serve.


Directions

Bake cauliflower with olive oil and some parsley and onions until sweet and soft. In the meantime fry onions and carrots until well done, add sugar, cream, pepper, and salt and bring up to temperature. Do not boil the cream sauce. Once the cauliflower is done, puree in a blender and add to the cream sauce. Add the rest of the ingredients and bring back up to temperature, cook at minimum for seven minutes.
