I'm a dairy free person avoiding gluten... so I miss pizza a lot. Now I've created an easy delicious 200 calorie personal pizza! It was so good I had to share! Ingredients

Rustic Crust Napoli Herb (personal size)
Galaxy Foods Rice Shreds Mozzarella
Roma Tomatoes (2-3)
Extra Virgin Olive Oil
Tips
*The Rustic Crust people tell you that you can put this on the rack to get a crispy crust. I found it to be a bit crumbly, so I baked mine on a baking sheet.
*Also the rice shreds will not look like melted bubbly cheese, but for a lactose free cheese this is the best that I have found.
Directions
Place crust on baking sheet
Add 1/4 tsp (yes I used this little) Extra Virigin Olive Oil and rub on crust
Slice 2-3 Roma tomatoes based on size and add to crust
Top with 1/3 cup of Mozzarella Rice Shreds
Bake at 425 for 12-15 minutes based on your oven
Let pizza rest ~5 minutes -- remember the tomatoes have a lot of water, so they can burn your mouth.
