Ingredients

    1 pound 93% lean ground beef
    1 jar spaghetti sauce, like Emeril's Kicked Up
    1 cup cottage cheese
    1 pound pasta -- rigatoni, macaroni, or other tube pasta
    1 cup mozzarella cheese, shredded
    1/4 cup Romano or Parmesan cheese


Directions

Boil water and cook pasta. Meanwhile, brown the ground beef; drain and blot to cut out grease. Add sauce, cottage cheese and cooked pasta to the beef and mix well. Pour mixture into 9X13 dish and top with mozzarella and Romano or Parmesan cheese. Bake for 20 to 30 minutes.

Serving Size: 1.5 cups or so
