Ingredients

    1 tbsp coconut oil or 1/2 cup water
    2 tbsp shallots, finely chopped (optional)
    1 celery stalk, small dice
    1 red bell pepper, chopped
    pinch sea salt
    1 tbsp cumin
    1 tsp oregano
    1 tbsp curry powder
    1 cup dried red lentils, sorted for stones and washed
    6 cups water
    2 cups fresh corn kernels (or frozen is fine)
    3 tbsp white miso, dissolved
    small handful parsley, chopped
    1 tbsp red wine vinegar

Directions

I put all ingredients in a crock pot for 4 hours on high. Stirring occasionally.
