Ingredients

1 TBSP olive oil or coconut oil
12 oz Salmon Fillets (2 6oz)
2 cloves garlic, pressed
.75 c chopped onion or 4 scallions thinly sliced
1 tsp ground ginger, or 1 Tbsp chopped fresh ginger
10 oz fresh baby spinach
1 lb bok choy chopped (3-4 c)
2 halves of freshly squeezed lime
sea salt
Directions
Heat .5 Tbsp of coconut oil in a large skillet over medium heat.
Season salmon with citrus blend or salt, and cook, approximately 4-5 minutes per side.
In a separate skillet, place the other .5 Tbsp coconut oil and 1 tsp water over medium high heat.
Add onion, garlic,and ginger and stir continuously for 30 seconds.
Add spinach, bok choy and 1/4 c water and stir continuously for 4-6 minutes or until vegetables are bright and colorful.
Place salmon and vegetables on plate, squeeze lime and serve.
Optional, add 1 tsp cilantro and a few shakes of red pepper flakes.
Serving Size: Makes 2 full plate servings.
