Ingredients

    14 oz can black beans drained
    14 oz can pinto beans drained
    1 bell pepper chopped (red, yellow, purple)
    1 cup chopped tomatoes
    1 cup shredded radicchio

    1/4 cup olive oil
    4 tbsp rice wine vinegar or balsamic vinegar
    1/2 - 1 juice of lemon

    salt and pepper to taste
    1-2 tsp smoked paprika
    1-2 cumin seeds or 1 tsp ground cumin

Tips



A nice side for picnics and barbecues. Serve on a bed of greens, or on a mound of brown rice for a quick and healthy lunch.


Directions

Easy!

Put the first five ingredients in a large bowl.

Whisk the next 3 ingredients in a smaller bowl, and add to the veggies. You may or may not wish to use all the dressing.

Season with salt, pepper, and the smoked paprika and cumin.

Stir. Eat. Smile!
