Ingredients

    2 tbs olive oil
    1 clove garlic
    1/2 medium onion
    1 green bell pepper
    1 cup white rice
    3 1/2 cups V8 juice

Tips

I like to add yellow summer squash when available.


Directions

Saute veggies in olive oil. Brown rice in frying pan with veggies then add V8 juice. Bring to boiling, then cover and simmer 20 minutes or until rice is tender and most of the juice is absorbed.
