Ingredients

    2 teaspoons vegan flaxseed oil
    1 teaspoon extra virgin olive oil
    1 teaspoon organic balsamic vinegar
    2.5 ounces organic mixed baby greens
    1/3 cup organic cucumber, peeled, sliced
    ¼ cup organic chopped raw cashews
    ½ large organic avocado, sliced

Tips

You can also add ten organic cherry or grape tomatoes (halved), ½ yellow or red bells pepper (chopped) and ¼ organic Bermuda onion (chopped) if you like. This recipe can be doubled to serve two people.


Directions

To make dressing, put the first three ingredients in a small bowl and briskly whisk until smooth. To make salad, place mixed baby greens in a large bowl. Pour dressing over salad and toss to coat all pieces. Place mixture of dressing and greens on a large salad plate. Top with organic peeled cucumber slices and organic chopped raw cashews. Arrange avocado slices in a pattern on top. Serve immediately.
