Introduction

Number of Servings: 6

Ingredients

    1lb (500g) lean ground beef or turkey
    1 14 oz (400g) tin of crushed tomatoes
    2-3 peppers (capsicum) slice long and thin
    1 large onion chopped
    5-6 mushrooms sliced
    1 can of kidney beans drained
    salt and pepper to taste
    2-3 tbsp low fat mexican cheese blend or chedder (shredded)
    1/4 cup not fat sour cream
    4 cups cooked brown rice

Tips

Can be made vegetarian without the ground meat and is still nice. Just add an extra tin of beans.


Directions

brown the meat in a deep frying pan or large saucepan.
add the vegetables and cook for approximately 5 mins. pour in the tin of tomatoes and kidney beans. Bring to boil then simmer. Salt and Pepper to taste. For a thinner sauce add half of the tomato tin fill with water.
Let simmer for about ten minutes. Serve over rice and add sour cream and cheese on top and ENJOY!
