Ingredients

    Ingredients:
    1 lb - Lein Stew Beef (or Chuck), cubed
    1 - Onion, small - course chop
    1 - Garlic, 1 clove - minced
    1 tbsp - *Extra Light Olive Oil
    1 pkg - Baby Carrots - coarse chop
    12 small - New Potatoes (or small Red) - quartered
    1/2 lb - Green Beans - coarse chop
    1 - 14.5 oz Canned Tomatoes (or stewed)
    4 tsp - Better Than Beef Boullion
    1/4 cup - Corn Starch
    Pepper to taste

Directions

Saute garlic and onions in EVOO (about 1 minute); add beef cubes and brown.
Add 2.5 quarts (10 cups) of water, the carrotts and potatoes, and beef boullion. Bring to boil, stir, then cover 10-15 minutes. Add canned tomatoes and green beans. Can add corn starch to thicken. Season with pepper. Salt is optional as Beef Boullion can be salty. (Another 1 tsp can be added, to taste).
Makes approx 10 2-cup servings.

    My family really likes this stew. But I had to cook it longer to get the potatoes soft enough, about 45 min. And when you add the cornstarch, make sure you mix it in a little water before adding it to the stew. - 6/3/08

    We really liked this. I added marjoram, oregano and bay leaves and a bit more cornstarch. The calories by ingredient are too low as shown by ingredient. One baby red potato has about 110 calories (a serving has a bit more than 1 potato)! The baby carrots should be about 15 calories per serving. - 2/27/13

    I enjoyed this recipe - and found it fairly easy. I thought it was a little bland and could have used some spices to ramp up the taste a bit. - 2/19/11
