Ingredients

    Kroger Vegetable Juice, Low Sodium (8oz), 2 serving Green Peppers (bell peppers), 2 cup, strips
    Raw White Onion (Serving = 1 medium Onion), 1 serving
    Celery, raw, 2 stalk, large (11"-12" long)
    Kroger Cod Fillet 12 oz. package, 4 serving
    Parsley, dried, 2 tbsp (remove)
    brown rice (1 cup cooked), 2 serving

Directions

Combine the vegetable juice, bell peppers, onion, and celery in a large nonstick skillet; bring to a boil over medium-high heat. Reduce the heat and simmer until the vegetables are just softened, about 4 minutes.

Nestle the cod into the vegetables. Reduce the heat and simmer, covered, until the fish is just opaque throughout, about 8 minutes. Sprinkle with the parsley and serve with the rice.

Serving Size: Yields 1 cod fillet, 1 cup vegetables with sauce, and 1⁄2 cup rice per serving.
