Ingredients

    Lentils- 2 cups, washed
    Better than Bullion, Chicken Base- 3 tsp.
    2 large carrots
    2 large celery stalks
    1/2 a large purple onion
    4 large fresh mushrooms
    mini red and yellow bell peppers, 2 (or more)
    1/2 cup quinoa
    5 cups water
    curry powder to taste
    cumin to taste
    cilantro to taste

Directions

Dump all ingredients into Crock Pot and cook on high for 4 hours or low for 8 hours.

Serving Size: Makes 10 1-cup servings
