Introduction

I got this from FoodWishes.com and have made a few adjustments over time. I use breast meat instead of wings (increase chicken to 5lbs if wings) and increased the amount of flour. Ingredients

    Chicken:
    5 lbs chicken wings or 2.5-3 lbs chicken breast
    salt and fresh ground black pepper to taste
    3 tbsp Frank's hot sauce
    2 tbsp veg oil
    1.25 rounded cup flour

    Sauce:
    1.5 cup orange jam or marmalade, (strain if contains an excess of orange rind pieces)
    1/3 cup rice vinegar
    1/4 cup hoisin sauce
    1-2 tsp Sambal, or other Asian-style chili paste to taste, or may sub red pepper flakes to taste
    1 tablespoon soy sauce
    finely minced garlic cloves
    toasted sesame seeds

The flour is totally optional. Don't batter the chicken for a lower cal/carb option.


Directions

Pre-heat oven to 400°. In bowl, season chicken with pepper and salt. Add hot sauce and toss. Add oil and toss. Coat your baking sheet with foil ands pray with cooking oil. In large plastic pag/trash bag, add flour and then chicken. Bunch up bag and shake until coated well. Place on baking sheets, then spray cooking oil on chicken.

Bake for 30 minutes, then flip chicken. Bake again for 30 minutes if using wings. If using breast meat, bake for 15 minutes, flip, then bake another 15 minutes.

Mix all ingredients in bowl.

Heat mixture at medium-high heat, bring to simure and boil for roughly 5 minutes. Set aside.

Add wings to bowl, then add sauce and coat. Let sit for 5 minutes, then add a little more sauce.
