Traditional Irish Soup Traditional Irish Soup

Ingredients

    Head of Cabbage, chopped
    1 Medium Onion, sliced
    4 cups low sodium beef broth
    2 cups chopped carrots
    3 large potatoes, chopped
    2 lbs stew meat, which ever you prefer
    2 tablespoons dried thyme
    salt and pepper to taste

Tips

Be sure to chop the cabbage thin enough for it to cook through. I left mine in large quaters and it wasn't cooked as well as the other vegtables. Also, do not add too much salt becuase the cabbage creates enough flavor for the whole pot :)


Directions

Place beef on stove top in large pan, cook until browned on all sides. (set aside drippings) While beef is cooking, chop vegtables and set them aside keeping them separated. Turn on slow cooker to high (depending on your slowcooker) layer beef, potatoes, onions, carrots, and cabbage into the slowcooker topping it all off with a layer of potatoes. (sprinkle each layer with thyme and salt/pepper to taste) Add beef drippings and beef broth over the top of the layers, cover slowcooker with lid tightly. Let cook for 3 hours, stirring about half way.
