Introduction

Ingredients

    2 - 5 oz cans of water packed tuna
    2 small red potaotes- boiled and cooled slightly
    1 small avacado- sliced
    2-4 cups green leaf lettuce, cut into bite size pieces
    4-6 radishes, sliced thinly
    1 cucumber, seeded and sliced
    1 med tomato sliced
    4-8 black olives , sliced
    3/4 c Extra Virgin Olive Oil
    1/2 c. fresh lemon juice
    1 tsp. Dijon mustard
    3-4 leaves fresh basil, sliced thinly
    salt and pepper as desired

Tips

you may add hard cooked eggs instead of the avacado .


Directions

boil the red potatoes until you can pierce them with a fork. Drain and let cool slightly. Slice and arrange around individual plates on a bed of lettuce. Arrange the drained tuna on to the center of the lettuce and all of the rest of the ingredients should be arranged on the plate to look pretty. Top with the dressing:
Combine the olive oil, lemon juice, fresh basil leaves, Dijon mustard, salt and pepper. Shake vigorously and pour on top of the salad.
