Introduction

Ingredients

    1 1/2 cups dry quinoa
    3 cups water
    1 cup canned black beans, rinsed
    1 cup canned sweet corn
    1 cup chopped red bell pepper
    1/2 cup chopped fresh onion
    1 tsp garlic powder
    1 tsp salt (or to taste)
    1/4 cup olive oil
    1/4 cup cider vinegar

Tips

Uncooked quinoa volume vs. cooked quinoa volume defies physics. You're going to need a bigger bowl.


Directions

Mix quinoa and water in rice cooker, or boil in covered pot until water is absorbed.

Mix in rest of ingredients, chill.
