Ingredients

Mac and Cheese
Pasta (Healthy Harvest Rotini)- 10oz
Shredded Sharp Cheddar (Reduced Fat 2%)- 8oz
Fat Free Cottage Cheese- 12oz
Fat Free Sour Cream- 8oz
Parmesan Cheese- 1/4c
2% Milk- 1/2c
Salt and Pepper to taste
Breadcrumb Coating:
Cheerios (crushed)- 1/2c
Spread (Country Crock Light)- 1/4c
Tips
Add ham and green onion for extra flavor and protein.
Directions
Preheat oven to 350 degrees F.
Bring large pot of water to a boil, add pasta, cook until done; drain.
Return cooked pasta to pot. Stir together Parmesan Cheese, Shredded Cheddar Cheese, Cottage Cheese, Sour Cream, Milk, salt and pepper.
In a small bowl miz together Cheerio Breadcrumbs and Spread (melted).
Pour macaroni mixture int a 9x13 baking dish and coat with breadcrumb mixture.
Bake 35 minutes or until top is golden brown.
Serving Size: Makes 8 1cup servings
