Number of Servings: 6

Ingredients

    6 Baby carrots or 1 large, peeled and cut
    1 C. Celery, diced
    1 C. Onions, diced
    1 C. each-Red and Green bell peppers, diced
    1/2 C. Crushed pineapple in juice, drained
    1 lb. Ground Chicken
    1 Tb Lite Soy Sauce
    1 C. Panko crumbs
    Seasoning to taste

Tips

This combination is very MILD in flavor and can be spiced up to taste. Very easy to cook all at once, freeze and reheat in microwave for a quick and very filling lunch or supper.


Directions

Using a food processor, loosely chop all vegetables and add first 5 ingredients. Pulse until it forms small pieces. Add ground chicken and soy sauce. Pulse until well combined. Stir in Panko crumbs and seasoning to preference. Using a 1/2 measuring cup, scoop out, form patties and place in refridgerator until ready to cook. Can be cooked in a non-stick pan lightly sprayed, broiled or grilled on aluminum foil sprayed with non-stick.

Serving Size: 4 oz patties - makes 6

    Really easy and tasted great. Nice and moist. Could use a little more pineapple flavor but as a diabetic I have to watch sugar and carbs but we will have it again - 5/15/20
