Introduction
I threw this recipe together based on random objects I knew I had that would taste good together. You can do the same thing, because it's soup. Feel free to use this just as inspiration. Ingredients
-
1/2 tbsp olive oil
1 large sweet potato (about 4 cups cubed)
1 large apple
1/2 large onion
1 1/2 c lentils
1/2 vegetarian bouillon cube
Herbs of your choice (I used basil, rosemary, thyme, and bay leaves*)
*if bay leaves are used, take them out after the soup is finished boiling.
Tips
Soup is always good with some nice bread. Go get yourself a yummy baguette.
Directions
Chop the onion and brown it in with the olive oil in a large pot (don't skip this step).
Add in chopped sweet potato and apple for a few minutes before adding water, lentils, bouillon cube, and herbs.
After the water has come to a boil, turn the stove down to a simmer and let cook for 20 minutes or so until the sweet potato and lentils are fulled cooked.
Blend to desired consistency. I personally like my soup creamy with small chunks.
Enjoy!
