Introduction

Ingredients

10 Eggs
1/2 Cup Salted Butter
1 Pint Fat Free Cottage Cheese
1 Can Diced Green Chilis
1 Can Diced Jalapeno chilis
1 Pound Shredded Reduced Fat Mexican Cheese
1/2 Cup Whole Grain Flour
1 Teaspoon Baking Powder
1/2 Teaspoon Salt
Tips
You may vary the spiciness of this dish by using all diced green chilis or all diced jalapeno chilis. I fix a pan of this and put it in the refrigerater for breakfasts and simply reheat in the microwave or it is also good cold.
Directions
1. Melt butter and allow to cool.
2. Crack the eggs into a large bowl and mix.
3. Add cooled butter to eggs and mix.
4. Add the remainder of ingredients and mix well.
5. Butter the sides and bottom of a 9" X 13" baking dish.
6. Pour mixture into buttered pan and back at 400 degrees for 15 minutes.
7. Reduce oven heat to 350 degrees and bake for 30 minutes.
8. Cool slightly and cut in to 2" squares and serve.
Serving Size: Approximately 24 2" pieces.
