Introduction

These are like little oatmeal cookies! These are like little oatmeal cookies!
Number of Servings: 15

Ingredients

    2.25 cups white flour
    .5 cup oatmeal
    1 tsp. salt
    4 tsp. baking powder
    2 Tbs. sugar
    2 eggs
    1.75 cups rice milk
    .25 cup oil
    1 tsp. vanilla
    1 tsp. cinnamon
    dried fruit - cherries, blueberries, cranberries

Directions

Pre-heat griddle to 375F. Beat eggs. Add rice milk, oil and vanilla and beat well. Add flour, oatmeal, salt, baking powder, cinnamon and sugar to egg mixture and beat well. May need to add more milk or flour to thin or thicken the batter. Ladle batter onto griddle. Sprinkle each cake with dried fruit. Turn when pancake has solidified enough to turn easily and is golden brown on bottom. Makes 12-15 pancakes.
