Ingredients

2 lbs mushrooms - mixture cremini, baby bellas, shittake, button sliced 1/4" thick
2 cloves garlic
2 tsp. herbs de province
2 Leeks cleaned, sliced 1/2'' thick
5 cups carrot juice
3 cups water
2 carrots chopped
3 cups cauliflower broken small
1/4 c. raw cashews
1 T. lemon juice
2 tsp fresh thyme
1tsp fresh rosemary
2 cans white beans (navy, cannolini etc)
5oz bag spinach
1/4 c. parsley
Directions
saute mushrooms in 1/8 cup water till fragrant & soft
In separate pan bring carrot juice and water to boil with carrots, leeks, and cauliflower. Simmer 30 min. or till tender.
Place 1/2 of carrot veggie mix in blender with cashews, lemon juice, rosemary, and thyme. Blend till creamy.
Mix mushroom mixture, veggie soup, blended veggies, beans, spinach, parsley. Cook till spinah wilts. Serve
