I like my pie spicier and less sweet. This is just the filling, if used for pie, count the crust calories separately. A small can of pumpkin makes 8 ramekins of custard. Number of Servings: 8

Ingredients

    2 eggs
    1/2 cup sugar
    1 can of pumpkin (smaller size)
    2 tsp cinnamon
    1/2 tsp ginger
    1/8 tsp nutmeg
    1/2 tsp cloves
    1 can evaporated non-fat milk


Directions

Beat eggs slightly. Stir in sugar. Stir in pumpkin. Stir in spices. Stir in milk. Divide between 8 ramekins.

Place ramekins in larger casserole dish. Boil a pot of water. Preheat oven to 400. Place casserole dish with ramekins in oven, and fill around the ramekins with boiling water. Bake until knife inserted in center comes out clean, about 30 minutes.

Serving Size: 8 ramekins, or filling for one 9 inch pie
