    Thumb-sized piece of ginger, peeled and finely chopped
    2 cloves garlic, finely chopped or pressed
    1 onion, chopped
    1 large sweet potato, peeled and chopped
    1 can garbanzo beans (14 oz), drained
    1 can diced tomatoes (14 oz)
    large container vegetable broth (28 oz)
    1/2 can (14.5 oz) coconut milk
    2 cups fresh spinach
    2/3 cup brown rice
    1 tsp curry powder
    salt and pepper to taste


Combine all ingredients except spinach in a pot and simmer until sweet potatoes are tender. Stir in spinach during the last couple minutes of cooking.
