Introduction

Ingredients

1½ c turkey broth, low fat and no salt added
1 onion, chopped
5 cloves garlic, minced
1 TBS cumin
½-1 tsp chili powder to taste
1 can green chilies. chopped
8 oz Salsa Green Mountain Mild
1 sm can diced tomatoes no salt added
4 # bottom round roast
1-2 TBS olive oil to brown
3 medium red potatoes, cubed
16 oz frozen veggies
Directions
Place 1 c broth, spices, green chilies, onion, tomato, potatoes, salsa in crock pot on high.
Cut beef into cubes and brown in oil. Add to crock pot.
Add remaining broth to skillet to remove bits attached to skillet. Add to crock pot.
Reduce to low and cook for 6-8 hours. Meat will be tender after 4 hours.
Add frozen veggies at end for about 20-30 minutes until heated through.
