Ingredients

    1 6.75 oz Bag Maifun Rice Sticks soaked
    8 c. Chicken broth
    1 c. Chopped Celery
    1 c. Chopped Onion
    1 leek, cleaned, sliced with greens
    3 cloves garlic finely chopped
    3 Tbl Ginger, sliced & pounded
    1 Tbl Sesame oil (or more to taste)
    1 Tbl Rice wine vinegar.

Tips

Substitute firm fish for the chicken. Add more sesame oil to taste.


Directions

Soak noodles in warm water till softened.
Saute Celery, onion, leek, garlic & ginger in 1 tsp oil
Add diced chicken & broth.
Simmer for 20 minutes
Add Sesame oil, Rice wine vinegar & rice sticks. Bring back to a boil briefly.
Serve.
