Introduction

This is an easy to make and so good that you will think your cheating. This is an easy to make and so good that you will think your cheating.
Number of Servings: 24

Ingredients

    1 Duncan Hines Spice Cake Mix
    1 cup of Apple Sauce
    1 cup of grated carrotts
    1tsp cinnimon
    1 egg beater
    baking spray

    1 low fat cream cheese
    1cup powder sugar (10 x Sugar)
    1 tsp vanilla extract
    1/2 cup pecans chopped

Tips

nuts could be added to cake mixture. These are wonderful for breakfast, or with coffee for a night time snack.


Directions

sift cake mix into large bowl, add egg beaters, apple sauce, cinnimon, mix with a hand mixer fold in carrotts
spray cup cake pans with non stick spray, scoop in mixture into pans pre heat oven to 350 and bake for 18-25 min.
frosting:
add cream cheese, powder sugar,mix until smooth add in vanilla extract, fold in chopped pecans
frost cup cakes when they are cool. If you can wait that long.
