Ingredients

    Salad:
    House Foods Tofu Shirataki Spaghetti Shaped Noodle, 1 bag
    Tofu, firm, 1 block
    Canola Oil, 1 1tsp
    Vegetables, Mixed Salad Greens, 2 serving(s)

    Dressing:
    Basil, 20 leaves
    Olive Oil, 1 1tsp
    Ginger Root, 1 tsp
    Lime Juice, 0.25 cup
    Garlic, 1 clove
    Salt and pepper, to taste

Tips

This salad is very simple, but also tastes delicious with grated carrot, bean sprouts, cherry tomatoes, or other fresh ingredients. Experiment away!


Directions

Place block of tofu in a colander, cover with something heavy, and allow excess water to drain. This can be done for an hour or more. Cube tofu.

Drain shirataki noodles and soak in fresh cold water for 10-15 minutes. Bring a pot of water to boil and add noodles; boil for 3-5 minutes. Rinse with cold water and drain.

While the noodles are cooking, heat canola oil over medium high heat, and add cubed tofu. Cook until lightly browned. Allow to cool.

In a blender, add basil, olive oil, ginger root, garlic clove, and lime juice and pulse. Season with salt and pepper to taste.

Toss noodles, tofu, greens, and dressing together in a large bowl.

Serving Size: Makes 2 large portions
