Ingredients

    1 Large Butternut Squash
    3 Medium Apples
    1 Large Onion
    6 Sachets of Chicken Bovril
    6 cups Water
    1 tbsp prepared Chopped Garlic
    1 tbsp Curry Powder
    1/4 tsp Nutmeg
    1/4 tsp Black Pepper
    1 tbsp Olive Oil

Directions

Heat olive oil in large dutch oven
Sweat onions with spices until translucent in pot
add in apples and squash and stir cooking for approx 5 minutes.
Mix Bovril with water and add to pot.
Bring to a boil and simmer for 30 minutes or until apples and squash is tender.
Take off heat and use an immersion blender to puree.

Serving Size: Makes 10 1.5 cup servings

    Incredible!
    My family really loved this soup. I used an Ayurveda spice blend and a half-teaspoon of cayenne pepper for seasoning, and the combination worked quite well. - 11/26/13
