Ingredients

    Cake:

    1/2 cup light butter
    1/2 cup sugar, plus 3 tablespoons Truvia spoonable (equals 10 packets)
    6 oz non fat plain greek yogurt
    1 egg
    3 tsp vanilla extract
    2.5 cups flour
    2 tsp baking soda
    1 tb cinnamon
    1/2 tsp salt
    1 pound/3 medium granny smith or medium sweetness apples, peeled, cored and chopped.

    Topping:

    6 tsp unpacked brown sugar
    1/2 cup dry plain oatmeal
    3 Tbsp light butter
    1 Tb maple syrup

Directions

Pre-heat oven to 350.

Whisk butter, sugar, Truvia, yogurt and egg until creamy with no lumps.

Combine dry ingredients and mix until blended, then add to cream mixture.

Add apples -- batter will be very thick.

Spray bundt pan with non-stick spray, and pour in batter.

In a separate bowl, mix brown sugar, oats, butter, and maple syrup. Top evenly over batter. If you have a decorative bundt pan that you are planning to flip over to serve, you will want to do this step first before pouring the batter in to the pan, so the crunchy oats will be on top once flipped.

Bake for 50-60 minutes until toothpick comes out clean.

Serving Size: 15-2 inch slices in a large bundt pan.
