Ingredients

    *Almonds, dry roasted, .33 cup whole kernels(remove)
    **Flax Seed Meal (ground flax), 2 tbsp(remove)
    Corn Starch, 1 cup(remove)
    *Extra Virgin Olive Oil, 3 tbsp(remove)
    *Extra Lean Pork Loin, 12 oz(remove)
    *Basil, dried ground, 1 tsp(remove)
    Thyme, ground, 1 tsp(remove)
    Pepper, black, 1 dash(remove)

Directions

Place almonds in food processor and process until ground fine. Mix Almonds, flax seed, corn starch.
Pound Pork chops with mallet. Coat both sides of chops well. Place olive oil in skillet on moderately high heat until hot, turn down to medium. Place chops in skillet and brown both sides, turning to prevent burning until done.

    Incredible!
    I left out the cornstarch/olive oil and baked chops. I took egg white in a shallow glass rectangle and the dry mixture in another glass rectangle. I dipped the chops and then dipped it in the dry mixture and put on a baking sheet with wire racks (PAMM'd the racks) and baked 425 at 16 minutes. - 9/19/13
