Ingredients

1 package of 16 bean soup mix (I like the goya brand)
1 8 oz. tomato sauce
2-12 oz cans of fat free chicken broth
2 bouillon chicken cubes (the larger ones)
1/4 c. onions
1 tbs. chopped jalapenos (for a little kick)
2 tbs. jarred garlic with sun-dried tomato
4-6 cups of water
cumin and pepper to taste
fresh chopped cilantro or basil for garnishing
1/2 cup fresh diced tomato
Directions
I used a dutch oven pot, perfect for soups, stews and stocks. I first rinsed the beans and left them soaking overnight in about 6 cups of water. The following day I added the 2-12oz. cans of chicken broth, the 2 bouillon cubes and cooked for about an hour. About 30 min. into cooking add 1-8oz. can of tomato sauce, 2 tbs. of jarred garlic with sun-dried tomato, cumin and black pepper to taste. Keep adding water to achieve desired consistency (between 4-6 cups - I like mine nice, thick and hearty). For the last 10 mins. of cooking, add the onions, fresh tomato and jalapeno. Garnish with freshly chopped cilantro and baked tortilla chips or for an italian twist, garnish with freshly chopped basil and wholesome multigrain toast. Enjoy!!! makes about 8-2 cup servings...
