Ingredients

Marinade:
3 cup coffee
1/2 cup soy sauce
1 Tbsp grated ginger root or 1.5 tsp organic ginger juice
1 lg clove garlic, grated
1 tsp toasted sesame oil
2.5 lb beef, top round steak
2 lg red bell peppers, sliced in 2" pcs - approx. 4 cups
4 lg yellow onions, sliced in 2" pcs - approx. 4 cups
1 fresh broccoli crown, cut in 2" pcs.
1 can sliced water chestnuts
2 cans sliced mushrooms
4 Tbsp canola oil, divided
Tips
Beef is easier to slice thin if partially frozen. Stir fry vegetables crisp tender, do not over cook.
Directions
Prepare marinade and pour into zipper bag. Thinly slice top round steak, trimming any fat, add to marinade. Marinate 2 -3 hours. Reserve 3 cups marinade.
Prepare rice per package directions.
Using Wok or large non-stick frying pan, Stir fry fresh vegetables in 4 small batches in 1 Tbsp oil (each batch). Set aside.
Stir fry beef in small batches, set aside.
Add corn starch to marinade, cook in wok until thickened. Add stir fry vegetables, mushrooms, water chestnuts and beef. Toss to coat in sauce and heat through. Serve over rice.
Serving Size: Makes 8 servings stir-fry; 8 - 1/2 cup servings rice
