Introduction

This is a nutty, lower sugar granola without a lot of added oil. Not a sweet breakfast cereal, but something toasty & crunchy to put on top of yogurt. Ingredients

    Gluten Free Rolled Oats, 4 cup
    Pecans, .5 cup, chopped
    Flax Seed Meal (ground flax), 4 tbsp
    Coconut Oil, 1.5 tbsp
    Maple Syrup, 2 tbsp
    Honey, 1.5 tbsp
    Nutmeg, ground, 1/2 tsp
    Cinnamon, ground, 1.5 tsp
    Salt, .25 tsp

Tips

I like my granola very mild and not too sweet, but this could actually use more sweetener. I would modify this to increase the honey to 6 Tbs and omit the maple syrup...or maybe add some apple juice...


Directions

1. Preheat oven to 300.
2. Mix dry ingredients together.
3. Melt coconut oil and mix with other sweeteners.
4. Add sweeteners to dry ingredients and mix well.
5. Spread onto sheet pans and bake for about 30 minutes, stirring after 10 minutes and every 5 minutes after that.

Serving Size: Sixteen (16) 1/4c. servings
