Introduction

This is a great recipe for calorie-reduced, low fat, low sugar tasty muffins. I try and use organic ingredients as well as lactose free milk for those with lactose intolerance. Ingredients

    Dry Ingredients:

    2.25 cups of unbleached organic flour ( alll purpose )
    1 tsp nutmeg
    1 tbsp cinnamon
    1 tsp baking powder
    1 tsp baking soda
    1 cup of organic Sultana dried raisins

    Stir and mix ingredients in a large bowl by hand.


    Wet Ingredients:

    2 - 3 very ripe bananas crushed or pureed
    1 - 4 ounce container of vanilla low fat yogurt
    1/4 cup of Canola oil
    1/2 cup of skim Lactose Free milg
    1/4 cup of Unsweetend apple juice
    1/4 cup of organic cane sugar
    1/4 cup of maple syrup
    1 large egg


    Beat in a separate bowl.

    Place wet ingredients and mix into dry ingredients until well mixed.

    Drop an amount into a lightly buttered muffin tin ( or sprayed with Canola oil for lactose free ).

    Put in a pre heated oven at 375 degrees

375 degrees 18-20 minutes
