Introduction
I saw a recipe on Kraft's site for a "pantry" slow cooker meal and decided to make my own version. I added potatoes that needed to be used and used cream of mushroom soup instead of chive and onion cream cheese. I also used less flour for the thickener, less carrots and maybe more onions. Ingredients
-
-2 1/2 lbs boneless skinless chicken breasts, thawed and chopped into bite sized pieces
-6 1/2 oz baby carrots, chopped into bite sized pieces
-507 g potatoes, chopped into small pieces (about 4 C or 2 large potatoes)
-! C small chopped onion (I like white onions)
-1 can, 4 oz drained mushrooms (It measured btwn 1/2 - 2/3 C)
-1/8 C all purpose flour
-14 oz FF chicken broth, like Aldi's Fit and Active
-1 C frozen peas
-1 can 10.5 oz cream of mushroom soup from Aldi, Fit and Active
Directions
---Toss the chicken and flour in the bottom of the crockpot and then top with your carrots, mushrooms, potatoes, onions and chicken broth.
---Cover and cook on high for 3-4 hours. Stir in the peas and cream of mushroom soup and then cook another 1/2 hour. Season with pepper and salt if desired.
---Makes about 8 servings of 1 C each.
