Ingredients

4 4-ounce potatoes, diced
4 slices of bacon, cooked, drained, and diced
1 small onion, chopped
2 celery stalks, chopped
1 carrot, shredded
2 tbsp fresh parsley, chopped
1 tsp paprika (or to taste)
4 chicken bouillon cubes, dissolved in
4 cups of water
1 cup non-fat milk
2 tbsp cornstarch
1 C fat-free cheddar cheese, shredded
1 C cheddar cheese, shredded
Tips
Use vegetable bouillon, and omit bacon for a tasty vegetarian dish. I serve this with sour-dough bread. Yumm yumm!
Directions
Place all ingredients except milk, cornstarch, and cheeses in crockpot, set on low, to cook all day.
10 minutes before serving, add cheeses to pot, and stir cornstarch into milk, then add to pot. Allow to cook for 10 minutes.
