Ingredients

    1 box Duncan Hines Spice Cake Mix
    2 tbs flour
    1 3/4 cup water
    3 large egg whites
    1/2 Cup Golden Raisins
    2 oz chopped pecans
    1 med. Granny Smith Apple cut into bite size pieces
    1 cup shredded carrots
    1 can Betty Crocker Whipped cream cheese frosting

Tips

this cake does not raise very much so you shouldn't have to worry about over flow.


Directions

Mix first 4 ingredients in a bowl with a mixer on low speed for about 30seconds until moist then on med speed for about 2 minutes. Mix in by had the apples, carrots, raisins, and pecans. Distribute evenly into 36 cupcake liners. Bake at 350 for 18-21 minutes or until toothpick inserted in center comes out clean. Allow to cool completely before frosting.

Serving Size: Makes 24 cupcakes
