Ingredients

    4 medium potatoes

    12 oz shredded chicken

    1/2 cup frozen mixed veggies

    approx. 1/2 cup chicken broth

    Salt and pepper


Directions

Bake potatoes (or cook in microwave), cut across the top of the potato and scoop out the inside of the potato, leaving the a thin layer of potato and the skin intact (like twice baked potatoes). Reserve scooped out potato



In a separate bowl combine chicken, mixed veggies and 1/2 of the hot chicken broth. Add some of the reserved potato (to thicken the chicken mixture) add additional chicken broth if necessary, add salt and pepper to taste. Mixture should be thick. Fill the scooped out potatoes with the chicken mixture. Bake 350 degrees for 5-10 minutes (just to heat everything thru).
