Introduction

Number of Servings: 6

Ingredients

    1 Tbsp olove oil
    1 large onion chopped
    3 garlic cloves minced
    1 Tbsp chili powder
    1.5 tsp ground cumin
    3 cups pomi chopped tomato
    2 Lb winter squash de seeded peeled
    and cut into 1" pieces
    4 oz green beans cut into 1 " pieces
    1 cups dry beans (or a 16oz can)
    1 Tbsp jalopeno chopped and de seedeed

Directions

Soak beans overnight ,or use canned.(nutritional values will differ)Cook the dry beans the way recomended
Heat oil in pan medium heat add onions and saute until translucent,add garlic and spices stir for a minute.Add the tomatoes stir and bring to a boil add the aquash and green beans.Reduce heat cover and simme runtil veggies are almost tender,stir in the cooked beans and jalopeno.Cover and simmeruntil veggies are done about 10 min longer. season with salt and pepper.
